This email I received this morning made me SUPER HAPPY! Avocados are my very favorite food and I love eating them with basically everything. YUM!
on Avocados: The Poor Man’s Butter

Every time I mention that I eat four to six avocados a week, I hear all this gobbledygook about how fattening they are. I want to clear up this avocado debate right now. The fat in avocados is monounsaturated. This good fat is part of a healthy diet. It actually helps lower cholesterol. Avocados are rich in vitamins C and E, folic acid, and potassium. They also help your body absorb beta-carotene from other foods. Half an avocado is only 150 calories, and makes a perfect topping on a salad or some of your favorite whole-grain toast. Plus the pit is a giant seed that grows into a gorgeous plant.
Guacamole is a great, versatile condiment. It can be a healthy dip for veggies or a delicious sandwich spread to replace fattening mayo with avocados’ heart-healthy benefits. If you’re storing some for later, make sure you don’t skip the lime juice. The acid from the citrus will keep your guac from turning brown.
4 ripe avocados, peeled and pitted
1 tsp. ground cumin
1 tomato, seeded and diced
1/2 cup sweet white onion, minced
2 chilies, seeded and minced
1/4 cup cilantro leaves, chopped
4 Tbsp. fresh lime juice
Hot pepper sauce (to taste)
Sea salt (to taste)
White pepper (to taste)
Cut avocado in large chunks and mash coarsely in large bowl with fork. Add remaining ingredients and blend gently—leaving some small chunks is fine. Taste and adjust seasoning with more pepper sauce, salt, and pepper if desired. Makes 8 servings.
Today is Celebration Day! 100 posts AND I am one class closer to grad and it was a doosey! As a reward… Im gonna celebrate with food!!! Now, no.. its not what you think… Wait Ill explain.
On a normal day, i would make myself something healthy and simple and super easy… something no brainer, like Chicken Breast and Rice and veggies. Working full time, school full time, Mom full time, and the band doesnt leave me with a whole helluva lotta time to cook myself elaborate healthy meals. BUT TOOOODAY, I have bought some more expensive items and have/will take the time to make me some gourmet yumyummies.
So Far….
Breakfast: Seared Napa Cabbage with Chinese 5 spice and fresh ginger.
Lunch: Fish TACOS!!! Wooo Hooo… Tilapia Filet blackened with salt free cajun spice and cooked in 1 tsp of Black Truffle oil.. (omfg.) rolled into a whole wheat tortilla with fresh spinach, 1 tbs. light sour cream, and pico de gallo. 355 cals
Going out to go out running now and then back to the house to clean and organize my bathroom. What a good day! I cant wait to cook myself Dinner… any fabulous ideas?
So the rest of yesterday the eating was on point. Treated myself to my favorite sushi summer wraps (lettuce, avocado, cucumber, carrot, shrimp, and crab wrapped in a thin translucent rice wrapper.) For dinner, had a healthy turkey wheat tortilla dinner with a small dollop of cream cheese.
Yesterday’s exercise looked like this pic (sans the super hot army guys..lol.) Torrential rains across the state got dangerously close to a friend’s house…. soooo still not feeling so hot, I got out in the rain and sandbagged the hell outta that mutha. My arms hurt like hell today.

All-American Egg Mug
Turkey or Veggie sausage patty (with about 80 calories) 1 tbsp. sugar-free pancake syrup 1/2 cup fat-free liquid egg substitute (like Egg Beaters Original) 1 slice fat-free American cheese
Directions: Lightly spray a large microwave-safe mug with nonstick spray. Add sausage patty and microwave for 45 seconds. Use a fork to break patty into pieces inside mug, until mostly crumbled. Add syrup and toss to coat. Add egg substitute and microwave for 1 minute.
Gently stir and microwave for 45 seconds. Tear cheese into pieces and add to the mug. Microwave for 15 seconds.
Lightly stir, let cool slightly, and then dig in!
MAKES 1 SERVING

So Yes, I went home and ran… and Yes, I stayed on track with all my eating and Yes, I went over my calories AGAIN. sigh.
I stopped at my BFF’s house and brought her a little care package for Cinco De Mayo (Margarita mix, Jose Cuervo, limes, a small bottle of Grand Marnier, and a sombrero. lol) She had been feeling a little down and I knew my surprise would perk her right up.
Why oh WHY didnt I realize that she would absolutely want me to stay and drink with her? Hell, I dont know… but honestly no wasnt even an option. I had 3 of the yummiest Margaritas eva!!! and danced around the garage with her and her sombrero. Really fun.
Im gonna guesstimate that they each had bout 200 cals each. Sooo technically, I only went over by 220 calories? (1420) I wont be making epic weight loss progress doing that, but come on? making your best girly feel better? Yeah, every once in awhile, some things are just worth it.

I am a singer, so i completely understand the inclination to want to belt out the random musical ditty that you may have stuck in your head… But for the sake of your fellow employees, could you please NOT do it while in the bathroom stall at work? Its weird and awkward for the rest of us just trying to take a piss.
